HMDWL 31 – Tonight we love the tuna melt, a touch of fancy, and the Slingbox.
Plus we get ready for our first HMDWL Mom’s Recipes Cookoff.
First up..Mom Lindley’s Taco Meatloaf!
1 TBS oil
1/2 cup chopped onion
1/2 cup green and red bell peppers
1 clove garlic finely minced
1 lb lean ground beef
4 oz cheddar cheese (shredded)
3/4 cup bread crumbs (Doris says make from toast)
2 TBS parsley
2 tsp Worcestershire sauce
1 tsp chili powder
dash of black pepper
1/2 c plain yogurt
1/2 c tomato sauce
Saute the onion and pepper and garlic in oil. After the onions are almost translucent, add all the ingredients into a large bowl. Shape into a loaf (as best as you can – not as firm as regular meat loaf). Bake at 375 for about 45 mins

Yeah!! Taco meatloaf!!! (I say this like I'm going to ever actually make it, but somehow making an entire meatloaf for one person seems like a bit much. Instead I will just be excited inside.)

Let me second the recommendation for Leslie and the Lys. If you're looking for a touch of fancy with bedazzled clothing, she's your girl. She even did a song called 'Hey Bedazzler' and had a traveling museum dedicated to Gem Sweaters (she calls herself the Keeper of the Gems).
And best of all, she's from IOWA, home of Rob Nelson Lindley!

How much do I love my Slingbox! My SB is hooked up to my bedroom Tivo. In the evening, I'll sit in my recliner in the living room watching my HD Tivo and be watching a baseball game or football game playing on my computer through Slingbox! Also, they have software for PDA's so I can also watch my Tivo on my Dell Axim. Slingbox rocks!

I actually made this tonight…cept I did cilantro instead of parsley and cumin instead of chili powder. Was pretty tasty!
